Cucumber Soup

So today I had a busy day, which I always love because it draws attention away from food. School was long and I spent the day at the library researching vegan recipes, SATS, scholarships etc. I found this wonderful easy recipe in the latest issue fo Redbook and I rushed home early to try it.

Cold Cucumber Soup

1 cucumber

1/2 cup of buttermilk (but for vegan reasons I used soy)

Seasonings

Lemon Juice

Blend. Add seasonings to your liking.

Easy and good. I love it. Its sitting in my fridge for tomorrow (I always leave leftovers.)

Here it goes

Breakfast actually is the hardest meal of the day for me because I am super lazy and I dont like tofu in the morning. So I called up my supercool Vegan uncle louis bodyguard to the stars to help me.

The Lazy Girl's Vegan Shake

Fruits: anything; berries, mangos, bannanas, peaches etc. My mom got this amazing canned fruit from sams 50 in a pack $12.

Juice: Fruit Juice, whatever.

Blend. Isnt that wicked? No worries I like to do this when school is in session, I make a big batch pour in recycled water bottles and carry them to school. Nuts are good too just a big palmful protein and fruit in the morning and it taste like heaven.

This blog I came across uses veggies in her shake, I like her blog its kinda funny http://veganteencuisine.blogspot.com/search/label/smoothies

Peggy's green smoothie

serves one

2 handfuls of spinach
1 kiwi, peeled and quartered
2-4 cubes of frozen watermelon
About 1/2 cup to 1 cup of water.......
